Ingredients

  • Brown Sugar: 2 tablespoons
  • Cinnamon: 1 teaspoon
  • Cranberries: 1/2 cup (dried or fresh, chopped)
  • Apple: 1 medium (peeled, cored, and diced)
  • Pecans: 1/4 cup, chopped
  • Old-Fashioned Oats: 2 tablespoons
  • Brown Sugar: 1 tablespoon
  • Butter: 1 tablespoon, melted
  • Maple Syrup: For drizzling over the finished dish (optional)
  • Chopped Parsley: Adds a pop of color and freshness (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and scrub the sweet potatoes, then pierce them with a fork several times.
  3. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. Let the sweet potatoes cool slightly, then cut them in half lengthwise.
  5. Scoop out the flesh, leaving a thin layer inside the skins.
  6. In a bowl, mash the sweet potato flesh with melted butter, brown sugar, cinnamon, cranberries, and diced apple.
  7. Spoon the mixture back into the sweet potato skins.
  8. In a separate bowl, mix the chopped pecans, oats, brown sugar, and melted butter for the topping.
  9. Sprinkle the topping over the filled sweet potatoes.
  10. Return the sweet potatoes to the oven and bake for an additional 15-20 minutes, or until the topping is golden and crispy.
  11. Drizzle with maple syrup and garnish with chopped parsley before serving, if desired.
