- 1 sheet puff pastry, thawed
- 8 ounces Brie cheese, sliced
- 1 cup cranberry sauce (homemade or store-bought)
- 4 ounces pancetta, diced
- 1 tablespoon fresh thyme leaves
- 1 egg, beaten (for egg wash)
- Salt and pepper, to taste
- Fresh thyme sprigs, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface.
- Transfer the pastry to a baking sheet lined with parchment paper.
- Spread the cranberry sauce evenly over the pastry.
- Layer the Brie slices over the cranberry sauce.
- In a skillet, cook the diced pancetta until crispy, then sprinkle it over the Brie.
- Sprinkle fresh thyme leaves over the top.
- Fold the edges of the pastry over the filling slightly.
- Brush the edges with the beaten egg.
- Season with salt and pepper.
- Bake for 25-30 minutes or until golden brown.
- Let it cool slightly before garnishing with fresh thyme sprigs and serving.
Notes
- Use homemade cranberry sauce for a fresher flavor.
- Feel free to substitute the pancetta with bacon if desired.
