- 12 oz linguine pasta
- 1 lb sirloin or ribeye steak, cut into bite-sized pieces
- Salt & black pepper, to taste
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp Dijon mustard
- 1 tbsp fresh lemon juice
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup beef or vegetable broth
- ¾ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (plus more for garnish)
Instructions
- Cook the linguine according to package instructions, then drain.
- Season steak pieces with salt, black pepper, and smoked paprika.
- In a large skillet, heat olive oil over medium-high heat.
- Add the steak and cook until browned, about 3-4 minutes. Remove from skillet.
- In the same skillet, add butter and garlic. Sauté until fragrant.
- Stir in Dijon mustard, lemon juice, heavy cream, and broth. Bring to a simmer.
- Add cooked linguine, steak, and spinach to the skillet. Toss to combine.
- Stir in Parmesan cheese until melted and creamy.
- Garnish with parsley before serving.
