Description

Creamy Cowboy Butter Linguine with Steak Bites & Spinach is a rich and flavorful dish that combines tender steak, creamy sauce, and fresh spinach with pasta.


Ingredients

  • 12 oz linguine pasta
  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup beef or vegetable broth
  • ¾ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (plus more for garnish)

Instructions

  1. Cook the linguine according to package instructions, then drain.
  2. Season steak pieces with salt, black pepper, and smoked paprika.
  3. In a large skillet, heat olive oil over medium-high heat.
  4. Add the steak and cook until browned, about 3-4 minutes. Remove from skillet.
  5. In the same skillet, add butter and garlic. Sauté until fragrant.
  6. Stir in Dijon mustard, lemon juice, heavy cream, and broth. Bring to a simmer.
  7. Add cooked linguine, steak, and spinach to the skillet. Toss to combine.
  8. Stir in Parmesan cheese until melted and creamy.
  9. Garnish with parsley before serving.

Notes

  • Adjust seasoning to your preference.
  • Use any type of pasta if preferred.
