Ingredients

  • Baby Potatoes (1.5 lbs)
  • Unsalted Butter (2 tbsp)
  • Garlic (4 cloves, minced)
  • Heavy Cream (1 cup)
  • Vegetable or Chicken Broth (½ cup)
  • Salt (½ teaspoon or to taste)
  • Freshly Cracked Black Pepper (¼ tsp)
  • Dijon Mustard (1 tsp, optional)
  • Chopped Fresh Parsley (1 tbsp, for garnish)

Instructions

  1. Wash and scrub the baby potatoes.
  2. Boil the potatoes in salted water until tender, about 15-20 minutes.
  3. In a pan, melt the butter over medium heat.
  4. Add minced garlic and sauté until fragrant, about 1 minute.
  5. Stir in the heavy cream and broth, mixing well.
  6. Season with salt, pepper, and Dijon mustard if using.
  7. Let the sauce simmer for 5-7 minutes until thickened.
  8. Drain the cooked potatoes and add them to the sauce.
