    • 1/2 cup rolled oats
    • 1/4 cup brown sugar
    • 1/4 cup all-purpose flour
    • 1/4 cup cold butter, cubed
    • Pinch of cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the crust: Mix flour, powdered sugar, and butter until crumbly. Press into an 8x8-inch baking pan. Bake for 15 minutes.
  3. Prepare the cream cheese layer: Beat cream cheese, sugar, egg, and vanilla until smooth. Pour over the crust.
  4. Make the rhubarb layer: Combine rhubarb, sugar, cornstarch, and lemon juice. Spread over the cream cheese layer.
  5. Prepare the crumb topping: Mix oats, brown sugar, flour, butter, and cinnamon. Sprinkle over the rhubarb layer.
  6. Bake for 35-40 minutes until set. Cool before cutting into bars.
