- 2 chicken breasts, sliced thin
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 8 oz short pasta (penne, rigatoni, or farfalle)
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1/4 cup chicken broth or reserved pasta water (plus extra as needed)
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large pan, heat olive oil over medium heat.
- Add sliced chicken and season with salt and pepper. Cook until no longer pink.
- Add minced garlic and sauté for 1 minute.
- Stir in ricotta and Parmesan cheese.
- Add cooked pasta and chicken broth. Mix well to combine.
- Stir in chopped basil and parsley. Adjust seasoning if needed.
- Serve hot.

- Use reserved pasta water to adjust sauce consistency if needed.
- Feel free to add vegetables like spinach or cherry tomatoes.
