Description

Creamy Ricotta Chicken Pasta is a rich and flavorful dish that combines tender chicken with a creamy sauce.


Ingredients

  • 2 chicken breasts, sliced thin
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 8 oz short pasta (penne, rigatoni, or farfalle)
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth or reserved pasta water (plus extra as needed)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat.
  3. Add sliced chicken and season with salt and pepper. Cook until no longer pink.
  4. Add minced garlic and sauté for 1 minute.
  5. Stir in ricotta and Parmesan cheese.
  6. Add cooked pasta and chicken broth. Mix well to combine.
  7. Stir in chopped basil and parsley. Adjust seasoning if needed.
  8. Serve hot.

Notes

  • Use reserved pasta water to adjust sauce consistency if needed.
  • Feel free to add vegetables like spinach or cherry tomatoes.
