  • 2 tbsp melted butter
  • ¼ cup vegetable oil or butter (for frying)

Instructions

  1. In a mixing bowl, combine cornmeal, flour, sugar (if using), baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the egg, buttermilk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but scoopable.
  4. Heat ¼ cup oil or butter in a large skillet over medium heat until hot and shimmering.
  5. Drop batter into the skillet by spoonfuls and gently flatten into small rounds.
  6. Fry for 2–3 minutes per side, or until golden brown and crisp.
  7. Remove and drain on paper towels. Serve warm.
