- 4 boneless chicken breasts, pounded to 1/2 inch thickness
- 1 cup grated Parmesan cheese (freshly grated recommended)
- 1 cup panko breadcrumbs (or gluten-free breadcrumbs for gluten-free version)
- 1/2 cup all-purpose flour (or gluten-free flour for gluten-free version)
- 2 large eggs, beaten
- Salt and black pepper, to taste
- 4 garlic cloves, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon fresh lemon juice
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Parmesan cheese and panko breadcrumbs.
- Season the chicken breasts with salt and black pepper.
- Dredge each chicken breast in flour, then dip in beaten eggs, and finally coat with the Parmesan-panko mixture.
- In a large skillet, heat olive oil and butter over medium heat.
- Add the coated chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side.
- Transfer the chicken to a baking dish and bake for 15-20 minutes until cooked through.
- While the chicken bakes, prepare the garlic sauce. In the same skillet, add minced garlic and sauté until fragrant.
- Add chicken broth, heavy cream, lemon juice, salt, and black pepper. Simmer until the sauce thickens.
- Serve the chicken drizzled with garlic sauce and garnish with chopped parsley if desired.
Notes
- For a gluten-free version, use gluten-free breadcrumbs and flour.
- Make sure the chicken is cooked to an internal temperature of 165°F (75°C).
