Description
A hearty and comforting Crock Pot Lasagna Soup that combines the flavors of traditional lasagna in a soup form.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups beef broth
- 2 tablespoons tomato paste
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic. Cook until the onion is soft.
- Transfer the beef mixture to a crock pot.
- Add crushed tomatoes, beef broth, tomato paste, oregano, basil, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in broken lasagna noodles.
- Once noodles are cooked, stir in ricotta cheese and half of the mozzarella cheese.
- Serve hot, topped with remaining mozzarella, Parmesan cheese, and fresh basil if desired.
Notes
- This soup can be stored in the refrigerator for up to 3 days.
- It can also be frozen for up to 3 months.
- Feel free to add vegetables like spinach or zucchini for extra nutrition.
