Description

A hearty and comforting Crock Pot Lasagna Soup that combines the flavors of traditional lasagna in a soup form.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add the chopped onion and minced garlic. Cook until the onion is soft.
  3. Transfer the beef mixture to a crock pot.
  4. Add crushed tomatoes, beef broth, tomato paste, oregano, basil, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, stir in broken lasagna noodles.
  7. Once noodles are cooked, stir in ricotta cheese and half of the mozzarella cheese.
  8. Serve hot, topped with remaining mozzarella, Parmesan cheese, and fresh basil if desired.

  • This soup can be stored in the refrigerator for up to 3 days.
  • It can also be frozen for up to 3 months.
  • Feel free to add vegetables like spinach or zucchini for extra nutrition.
