  • 1¼ cups semi-sweet chocolate chips (melted and cooled slightly)
  • 1 cup heavy whipping cream (cold)

  • ¾ cup semi-sweet chocolate chips
  • ⅓ cup heavy whipping cream

Instructions

Step 1: Prepare the Crust

  1. Line an 8x8 or 9x9-inch square baking pan with parchment paper.
  2. In a food processor, pulse the cookies until finely crushed.
  3. Mix with melted butter until the texture resembles wet sand.
  4. Press firmly into the bottom of the pan to form an even crust.
  5. Chill in the fridge while you prepare the filling.

Step 2: Make the Cheesecake Layer

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, mixing until fully combined.
  3. Stir in the melted, slightly cooled chocolate chips.

  6. Spread the mixture evenly over the chilled crust.
  7. Return to the fridge for at least 1 hour.

  2. Pour over the chocolate chips in a bowl and let sit for 1 minute.
  3. Stir until smooth and glossy.
