A beautiful no-bake twist on the Italian classic, this Delectable Raspberry Tiramisu layers mascarpone cream, tart raspberry puree, and coffee-soaked ladyfingers for a refreshing and elegant dessert.

Raspberry Puree:
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
Mascarpone Cream:
- 1 cup heavy cream
- 8 oz mascarpone cheese (softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
For Assembly:
- 1 package ladyfinger cookies
- 1/2 cup brewed coffee (cooled)
- Fresh raspberries (for garnish)
- Cocoa powder (for dusting)
Instructions
- Make Raspberry Puree: Combine raspberries, granulated sugar, and lemon juice in a saucepan. Simmer 5–7 minutes until berries break down. Strain to remove seeds. Cool.
- Prepare Mascarpone Cream: Whip heavy cream to soft peaks. In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth. Fold in whipped cream.
- Assemble: Dip ladyfingers quickly into coffee and arrange a layer in a 9x9-inch dish.
- Spread half the mascarpone mixture over the ladyfingers.
- Spoon half the raspberry puree over the cream layer.
- Repeat layers with dipped ladyfingers, mascarpone cream, and remaining raspberry puree.
- Cover and chill for at least 4 hours or overnight.
- Before serving, dust with cocoa powder and garnish with fresh raspberries.
