Description

Easy Snowballs are soft, sweet treats coated in coconut syrup.


Ingredients

Scale
  • 4 large eggs
  • 1½ cups sugar
  • 1 tablespoon vanilla essence
  • 1 cup oil
  • 2½ cups cake flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk

Syrup Ingredients:

  • 1½ cups sugar
  • 1½ cups water
  • 2 teaspoons red food colour
  • 2-3 cups desiccated coconut

Icing for Joining:

  • 1 cup icing sugar (sifted)
  • 1-2 tablespoons hot water

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Beat eggs and sugar until light and fluffy.
  3. Add vanilla essence and oil, then mix well.
  4. Sift flour, baking powder, and salt together.
  5. Alternate adding flour mixture and milk to the egg mixture.
  6. Pour batter into a greased baking pan and bake for 25-30 minutes.
  7. While baking, prepare syrup by boiling sugar, water, and food colour until slightly thickened.
  8. Cut cooled cake into squares or balls.
  9. Dip each piece into syrup, then roll in desiccated coconut.
  10. Join pieces with icing if making layered snowballs.

Notes

  • Store in an airtight container to keep them fresh.
  • Adjust syrup thickness by boiling longer for a stickier texture.
