Description

A refreshing and nutritious Edamame Salad with a zesty cilantro lime dressing.


Ingredients

  • 2 cups shelled edamame
  • 2 cups frozen organic corn
  • 1 red bell pepper, diced
  • 1/2 cup finely chopped red onion
  • 1/3 cup chopped green onion
  • Cilantro for garnish
  • For the dressing: lime juice, avocado oil, red apple vinegar, honey (or agave), sea salt, black pepper

Instructions

  1. In a large bowl, combine shelled edamame, corn, red bell pepper, red onion, and green onion.
  2. In a separate bowl, whisk together lime juice, avocado oil, red apple vinegar, honey (or agave), sea salt, and black pepper.
  3. Pour the dressing over the salad ingredients and toss to combine.
  4. Garnish with cilantro before serving.
