Description

An Elegant Black Forest Cake Roll combines rich chocolate, cherries, and cream in a delightful dessert.


Ingredients

  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons powdered sugar (for dusting the towel)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped cherries (fresh or jarred)
  • 2 tablespoons kirsch or cherry juice (optional)
  • 1/2 cup heavy cream
  • 4 ounces dark or semi-sweet chocolate, chopped
  • 1 tablespoon butter
  • Whipped cream (optional, for piping)
  • Whole cherries
  • Chocolate curls or shavings

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 15x10 inch jelly roll pan with parchment paper.
  3. In a bowl, beat eggs and sugar until thick and pale.
  4. Add vanilla extract and mix well.
  5. Sift together flour, cocoa powder, baking powder, and salt.
  6. Fold the dry ingredients into the egg mixture gently.
  7. Spread the batter evenly in the prepared pan.
  8. Bake for 12-15 minutes or until the cake springs back when touched.
  9. While warm, dust a clean kitchen towel with powdered sugar.
  10. Turn the cake onto the towel and peel off the parchment paper.
  11. Roll the cake with the towel and let it cool completely.
  12. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  13. Unroll the cooled cake gently.
  14. Spread whipped cream and chopped cherries evenly over the cake.
  15. Roll the cake back up without the towel.
  16. For ganache, heat heavy cream and pour over chopped chocolate and butter. Stir until smooth.
  17. Place the rolled cake on a serving plate and pour ganache over it.
  18. Decorate with whipped cream, whole cherries, and chocolate curls.

Notes

  • Use fresh cherries when in season for the best flavor.
  • Store leftovers in the refrigerator.
  • Chill the cake roll for a few hours before serving for better slicing.
