A delicious twist on the classic grilled cheese, combining the flavors of a French dip sandwich with melted Swiss cheese and roast beef.

- 8 slices crusty French bread
- 8 slices Swiss cheese
- 12 ounces thinly sliced roast beef
- 2 medium yellow onions, thinly sliced
- 4 tablespoons unsalted butter, plus extra for spreading
- 1 tablespoon olive oil
- 2 cups low-sodium beef broth
- 2 teaspoons Worcestershire sauce
- 1 teaspoon soy sauce
- 1 garlic clove, minced
- 1 sprig fresh thyme
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat olive oil in a pan over medium heat. Add onions and cook until caramelized.
- In a saucepan, combine beef broth, Worcestershire sauce, soy sauce, minced garlic, thyme, salt, and black pepper. Simmer for 10 minutes to make the au jus.
- Butter one side of each bread slice.
- Layer Swiss cheese, roast beef, and caramelized onions between two slices of bread, buttered side out.
- Cook sandwiches in a skillet over medium heat until golden brown and cheese melts, about 3-4 minutes per side.
- Serve hot with a side of warm au jus for dipping.
Notes
- Use fresh bread for the best texture.
- Adjust salt and pepper to taste.
- For extra flavor, add a splash of red wine to the au jus.
