- 2 large onions, thinly sliced
- 2 cups uncooked orzo pasta
- 3 cups chicken broth
- 1 cup shredded Gruyère cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and sauté until caramelized, about 15 minutes.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned.
- Stir in the orzo, chicken broth, and thyme. Bring to a simmer.
- Transfer the mixture to a baking dish.
- Top with shredded Gruyère cheese.
- Bake for 25-30 minutes, until the cheese is bubbly and golden.
