- 4 boneless skinless chicken breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 2 tablespoons butter
- 1 cup chicken broth
- 2 pounds russet potatoes
- 1/2 cup heavy cream
- 2 tablespoons brown sugar
- 1 tablespoon balsamic vinegar
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and cook until fragrant.
- Season chicken breasts with salt and pepper, then add to the skillet.
- Brown the chicken on both sides.
- Remove chicken and set aside.
- Add chicken broth, parsley, thyme, and butter to the skillet.
- Return chicken to the skillet and transfer to the oven.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Meanwhile, peel and chop russet potatoes.
- Boil potatoes until tender, then drain.
- Add heavy cream, brown sugar, and balsamic vinegar to the potatoes.
- Mash until smooth and creamy.
- Serve chicken with creamy mashed potatoes.
