Ingredients

  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup olive oil (extra virgin), plus more for drizzling
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon sea salt (flaky or coarse)

Instructions

  1. In a bowl, combine yeast, warm water, and honey. Let it sit for 5-10 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  4. Incorporate chopped rosemary and minced garlic into the dough.
  5. Place the dough in a greased bowl. Cover and let it rise for 1 hour or until doubled in size.
  6. Punch down the dough and divide it into muffin-sized portions.
  7. Place portions in a greased muffin tin. Drizzle with olive oil and sprinkle with sea salt.
  8. Let muffins rise for another 30 minutes.
  9. Bake at 375°F (190°C) for 20-25 minutes until golden brown.
