- 1 ½ pounds baby potatoes (red or gold), halved
- 2 tablespoons butter
- 1 tablespoon olive oil
- 5 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth or vegetable broth
- ½ cup grated Parmesan cheese
- ½ teaspoon salt (more to taste)
- ¼ teaspoon black pepper
- ½ teaspoon dried Italian herbs (or oregano + thyme)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Wash and halve the baby potatoes.
- Melt butter and olive oil in a large skillet over medium heat.
- Add the potatoes and cook until golden and tender, about 10-12 minutes.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Stir well.
- Add Parmesan cheese, salt, pepper, and dried herbs. Simmer for 5 minutes until the sauce thickens.
- Garnish with fresh parsley before serving.
Notes
- Use vegetable broth for a vegetarian version.
- Adjust seasoning to taste.
- For extra richness, add more Parmesan cheese.
