Ingredients

  • 1 ½ pounds baby potatoes (red or gold), halved
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth or vegetable broth
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt (more to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon dried Italian herbs (or oregano + thyme)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Wash and halve the baby potatoes.
  2. Melt butter and olive oil in a large skillet over medium heat.
  3. Add the potatoes and cook until golden and tender, about 10-12 minutes.
  4. Add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth. Stir well.
  6. Add Parmesan cheese, salt, pepper, and dried herbs. Simmer for 5 minutes until the sauce thickens.
  7. Garnish with fresh parsley before serving.
