Description

A delicious German Chocolate Cake Roll with a light chocolate sponge cake, rich coconut-pecan filling, and smooth chocolate ganache glaze.


Ingredients

  • 4 large eggs, room temperature
  • ¾ cup (150 g) granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup (65 g) all-purpose flour
  • ¼ cup (30 g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons milk
  • Powdered sugar (for dusting the kitchen towel)
  • 1 cup (240 ml) sweetened condensed milk
  • 3 egg yolks
  • ½ cup (115 g) unsalted butter
  • 1 cup (95 g) sweetened shredded coconut
  • 1 cup (120 g) chopped pecans
  • 1 teaspoon vanilla extract
  • 1 cup (170 g) semisweet or milk chocolate chips
  • ½ cup (120 ml) heavy cream, heated
  • 1 tablespoon butter (optional, for shine)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 15x10-inch jelly roll pan with parchment paper.
  2. Beat eggs, sugar, and vanilla until thick and pale.
  3. Sift flour, cocoa powder, baking powder, and salt together. Fold into egg mixture.
  4. Add milk and mix until smooth.
  5. Spread batter evenly into prepared pan. Bake for 12-15 minutes.
  6. Dust a kitchen towel with powdered sugar. Flip cake onto towel and roll while warm.
  7. Let cake cool completely.
  8. For filling, combine condensed milk, egg yolks, and butter in a saucepan. Cook until thickened.
  9. Stir in coconut, pecans, and vanilla. Let cool slightly.
  10. Unroll cake, spread filling evenly, then roll again.
  11. For ganache, heat cream and pour over chocolate chips. Stir until smooth.
  12. Add butter if desired for extra shine.
  13. Pour ganache over cake roll and let set before serving.

  • Roll cake while warm to prevent cracking.
  • Let filling cool slightly before spreading.
  • Chill cake roll before slicing for cleaner cuts.
