Description

Gingerbread Cheesecake Cookies are a delightful combination of spiced gingerbread and creamy cheesecake filling.


Ingredients

  • ⅓ cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • ½ cup granulated sugar (optional for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Add molasses, egg, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. In a separate bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
  7. Take a portion of gingerbread dough, flatten it, and place a spoonful of cheesecake filling in the center.
  8. Fold the dough around the filling and roll it into a ball.
  9. If desired, roll the cookie ball in granulated sugar.
  10. Place the cookie balls on a baking sheet lined with parchment paper.
  11. Bake for 10-12 minutes or until the edges are firm.
  12. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
