Description

A festive twist on classic tiramisu using gingerbread cookies and eggnog.


Ingredients

  • 2 cups heavy cream
  • 3 egg yolks
  • 1 1/4 cups powdered sugar
  • 2 1/4 cups mascarpone cheese
  • 1/2 cup eggnog
  • 40 gingerbread cookies
  • 1/2 cup coffee
  • 1 tsp rum extract
  • Cocoa Powder (for topping)
  • Crushed Gingerbread Cookies (for topping)

Instructions

  1. In a bowl, whip heavy cream until stiff peaks form.
  2. In another bowl, whisk egg yolks and powdered sugar until smooth.
  3. Fold mascarpone cheese into the egg yolk mixture.
  4. Gently fold in whipped cream.
  5. Combine eggnog, coffee, and rum extract in a shallow dish.
  6. Dip gingerbread cookies into the eggnog mixture quickly.
  7. Layer dipped cookies in a serving dish.
  8. Spread a layer of the mascarpone mixture over the cookies.
  9. Repeat layers until all ingredients are used, finishing with mascarpone on top.
  10. Chill for at least 4 hours or overnight.
  11. Before serving, sprinkle cocoa powder and crushed gingerbread cookies on top.
