A festive twist on classic tiramisu using gingerbread cookies and eggnog.

- 3 egg yolks
- 1 1/4 cups powdered sugar
- 2 1/4 cups mascarpone cheese
- 1/2 cup eggnog
- 40 gingerbread cookies
- 1/2 cup coffee
- 1 tsp rum extract
- Cocoa Powder (for topping)
- Crushed Gingerbread Cookies (for topping)
Instructions
- In a bowl, whip heavy cream until stiff peaks form.
- In another bowl, whisk egg yolks and powdered sugar until smooth.
- Fold mascarpone cheese into the egg yolk mixture.
- Gently fold in whipped cream.
- Combine eggnog, coffee, and rum extract in a shallow dish.
- Dip gingerbread cookies into the eggnog mixture quickly.
- Layer dipped cookies in a serving dish.
- Spread a layer of the mascarpone mixture over the cookies.
- Repeat layers until all ingredients are used, finishing with mascarpone on top.
- Chill for at least 4 hours or overnight.
- Before serving, sprinkle cocoa powder and crushed gingerbread cookies on top.
