Gingerbread Truffles are a festive treat made from gingerbread cookies and cream cheese, coated in white chocolate.
Ingredients

- 300g (about 2 ½ cups) gingerbread cookies, crushed into fine crumbs
- 120g (4 oz or half a block) cream cheese, softened
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- 1 tsp vanilla extract
- 250g (8 oz) white chocolate chips or melting wafers, for coating
- Optional toppings: festive sprinkles, crushed gingerbread, or a dusting of cinnamon
Instructions
- In a bowl, mix crushed gingerbread cookies and softened cream cheese until well combined.
- Add cinnamon, nutmeg, cloves, and vanilla extract. Mix until smooth.
- Chill the mixture in the refrigerator for 30 minutes.
- Once chilled, scoop the mixture and roll into small balls.
- Melt white chocolate chips in a microwave or double boiler.
- Dip each truffle into the melted chocolate, coating evenly.
- Place coated truffles on a baking sheet lined with parchment paper.
- Sprinkle with optional toppings while the chocolate is still wet.
- Chill again until the chocolate sets.
Notes
- Store truffles in an airtight container in the refrigerator.
- Truffles can be made ahead of time and stored for up to a week.
