  • Author: Emily
  • Total Time: 4 hours 9 minutes

Ingredients

Scale
  • 1 package (6 oz lime Jello)
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup cottage cheese (small-curd, full-fat or low-fat)
  • 1 can (8 oz crushed pineapple, drained)
  • ½ cup Cool Whip (optional, for extra creaminess)
  • ¼ cup chopped walnuts (optional, for crunch)

Instructions

  1. Step 1: Dissolve the Jello
  2. In a large mixing bowl, pour the lime Jello powder.
  3. Add 2 cups of boiling water and stir until completely dissolved (about 2 minutes).
  4. Step 2: Cool and Add Cold Water
  5. Stir in 1 cup of cold water.
  6. Let the mixture sit at room temperature for about 10-15 minutes to cool slightly before adding other ingredients.
  7. Step 3: Mix in the Good Stuff
  8. Gently fold in the cottage cheese and drained crushed pineapple.
  9. If using, add the Cool Whip for extra fluffiness.
  10. Stir in chopped walnuts if desired, reserving a few for garnish.
  11. Step 4: Chill and Set
  12. Pour the mixture into a serving bowl or individual cups.
  13. Cover and refrigerate for at least 4 hours, or until fully set.
  14. Before serving, garnish with extra walnuts or a dollop of Cool Whip if you like.

Notes

  • Texture Tip: For a smoother salad, blend the cottage cheese before mixing it in.

  • Fruit Options: Try swapping the pineapple for mandarin oranges or fruit cocktail.

  • Nut-Free Version: Simply omit the walnuts for an allergy-friendly option.

  • Presentation Ideas: Mold it in a vintage Jello mold or use a bundt pan for a festive shape.

  • Individual Servings: Spoon into small cups or ramekins for easy, portioned servings at parties.
