Instructions
- Step 1: Dissolve the Jello
- In a large mixing bowl, pour the lime Jello powder.
- Add 2 cups of boiling water and stir until completely dissolved (about 2 minutes).
- Step 2: Cool and Add Cold Water
- Stir in 1 cup of cold water.
- Let the mixture sit at room temperature for about 10-15 minutes to cool slightly before adding other ingredients.
- Step 3: Mix in the Good Stuff
- Gently fold in the cottage cheese and drained crushed pineapple.
- If using, add the Cool Whip for extra fluffiness.
- Stir in chopped walnuts if desired, reserving a few for garnish.
- Step 4: Chill and Set
- Pour the mixture into a serving bowl or individual cups.
- Cover and refrigerate for at least 4 hours, or until fully set.
- Before serving, garnish with extra walnuts or a dollop of Cool Whip if you like.
