Ingredients

  • 3 cups cooked shredded chicken
  • 2 cups shredded Monterey Jack or cheddar cheese
  • 1 (10 oz) can green enchilada sauce
  • 1 (4 oz) can diced green chiles
  • 1 cup sour cream
  • 1 small onion, diced
  • 8 corn tortillas (cut in halves or quarters)
  • 1 tbsp olive oil
  • ½ tsp cumin
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a skillet over medium heat. Sauté diced onion until soft.
  3. In a bowl, mix shredded chicken, sour cream, green chiles, cumin, garlic powder, salt, and pepper.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Layer tortillas, chicken mixture, cheese, and enchilada sauce. Repeat layers.
  6. Top with remaining cheese.
  7. Bake for 25-30 minutes until bubbly and golden.
  8. Garnish with fresh cilantro before serving.
