- 3 cups cooked shredded chicken
- 2 cups shredded Monterey Jack or cheddar cheese
- 1 (10 oz) can green enchilada sauce
- 1 (4 oz) can diced green chiles
- 1 cup sour cream
- 1 small onion, diced
- 8 corn tortillas (cut in halves or quarters)
- 1 tbsp olive oil
- ½ tsp cumin
- ¼ tsp garlic powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a skillet over medium heat. Sauté diced onion until soft.
- In a bowl, mix shredded chicken, sour cream, green chiles, cumin, garlic powder, salt, and pepper.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Layer tortillas, chicken mixture, cheese, and enchilada sauce. Repeat layers.
- Top with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
- Use rotisserie chicken for quicker prep.
- Adjust spice levels by adding more green chiles.
- Let casserole rest for 5 minutes before serving.
