- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup frozen corn (thawed)
- 1/2 cup red onion (diced)
- 1/4 cup cilantro (chopped)
- 1 jalapeño (seeded and minced; optional)
- 1 lime (juiced)
- Salt to taste
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup cilantro (chopped)
- 1 lemon (juiced)
- 1 clove garlic (minced)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado (sliced or mashed)
- Sesame seeds (for garnish)
- Green onions (chopped, for garnish)
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix shrimp with paprika, garlic powder, salt, black pepper, and cayenne pepper.
- Skewer the shrimp and grill for 2-3 minutes on each side until pink and cooked.
- In another bowl, combine corn, red onion, cilantro, jalapeño, lime juice, and salt to make the salsa.
- For the sauce, mix mayonnaise, sour cream, cilantro, lemon juice, garlic, salt, and black pepper in a bowl.
- To serve, place grilled shrimp in a bowl, top with corn salsa, sliced or mashed avocado, and drizzle with creamy garlic sauce.
- Garnish with sesame seeds and chopped green onions.
