Ingredients

  • 1 lb. large shrimp (peeled and deveined)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup frozen corn (thawed)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1 jalapeño (seeded and minced; optional)
  • 1 lime (juiced)
  • Salt to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup cilantro (chopped)
  • 1 lemon (juiced)
  • 1 clove garlic (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado (sliced or mashed)
  • Sesame seeds (for garnish)
  • Green onions (chopped, for garnish)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix shrimp with paprika, garlic powder, salt, black pepper, and cayenne pepper.
  3. Skewer the shrimp and grill for 2-3 minutes on each side until pink and cooked.
  4. In another bowl, combine corn, red onion, cilantro, jalapeño, lime juice, and salt to make the salsa.
  5. For the sauce, mix mayonnaise, sour cream, cilantro, lemon juice, garlic, salt, and black pepper in a bowl.
  6. To serve, place grilled shrimp in a bowl, top with corn salsa, sliced or mashed avocado, and drizzle with creamy garlic sauce.
  7. Garnish with sesame seeds and chopped green onions.
