Hawaiian Chicken with Coconut Rice

Description

A delicious Hawaiian chicken dish served with creamy coconut rice.


Ingredients

  • 4 Boneless, skinless chicken breasts
  • 1 cup Pineapple juice
  • 1/4 cup Soy sauce
  • 1/4 cup Brown sugar
  • 2 tablespoons Vegetable oil
  • 3 cloves Minced garlic
  • 1 tablespoon Minced ginger
  • 1/2 teaspoon Black pepper
  • 1 can Coconut milk
  • 2 cups Jasmine rice
  • 2 cups Water
  • 1 teaspoon Salt
  • 2 Green onions, chopped
  • 2 tablespoons Sesame seeds

Instructions

  1. In a bowl, mix pineapple juice, soy sauce, brown sugar, vegetable oil, garlic, ginger, and black pepper.
  2. Marinate chicken breasts in the mixture for at least 30 minutes.
  3. While chicken marinates, rinse jasmine rice under cold water until water runs clear.
  4. In a pot, combine rinsed rice, coconut milk, water, and salt. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  6. Grill marinated chicken over medium heat for 6-7 minutes on each side or until cooked through.
  7. Let chicken rest for a few minutes before slicing.
  8. Serve chicken over coconut rice, garnished with green onions and sesame seeds.

Notes

  • Adjust sweetness by adding more or less brown sugar.
  • You can substitute chicken with tofu for a vegetarian option.
  • For extra flavor, add lime juice to the marinade.
