A refreshing and nutritious winter salad packed with vibrant flavors.


Ingredients

  • 7 cups mixed spring greens
  • 1 1/4 cups orange segments (mandarin, clementines or tangerines)
  • 1/2 cup pomegranate seeds (or dried cranberries)
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup candied pecans, roughly chopped
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon shallot, minced
  • salt and pepper to taste

Instructions

  1. Prepare the salad by combining the mixed greens, orange segments, pomegranate seeds, feta cheese, and candied pecans in a large bowl.
  2. In a separate bowl, whisk together the olive oil, honey, Dijon mustard, apple cider vinegar, shallot, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately and enjoy your healthy winter salad.

Notes

  • For a different flavor, substitute dried cranberries for pomegranate seeds.
  • Adjust the sweetness of the dressing by adding more or less honey.
