Ingredients

- 2 pounds beef chuck or stew meat
- 2 tablespoons oil
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon oregano
- 1 medium onion, diced
- 4 cloves garlic, minced
- 3 cups potatoes, peeled and diced
- 2 cups roasted green chiles, chopped
- 3 cups beef broth
- 1 cup water
- 1 tablespoon flour, optional for thickening
Instructions
- Heat oil in a large pot over medium heat.
- Season the beef with salt, black pepper, cumin, garlic powder, and oregano.
- Add the beef to the pot and brown on all sides.
- Add the diced onion and minced garlic. Sauté until softened.
- Add the potatoes, green chiles, beef broth, and water. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
- If thickening is desired, mix flour with a bit of water and stir into the stew. Cook for an additional 10 minutes.
Notes
- Adjust seasoning to your taste.
- For a spicier stew, add more green chiles.
