Description

A flavorful and filling beef stew with green chiles and potatoes.


Ingredients

  • 2 pounds beef chuck or stew meat
  • 2 tablespoons oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 2 cups roasted green chiles, chopped
  • 3 cups beef broth
  • 1 cup water
  • 1 tablespoon flour, optional for thickening

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Season the beef with salt, black pepper, cumin, garlic powder, and oregano.
  3. Add the beef to the pot and brown on all sides.
  4. Add the diced onion and minced garlic. Sauté until softened.
  5. Add the potatoes, green chiles, beef broth, and water. Stir to combine.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
  7. If thickening is desired, mix flour with a bit of water and stir into the stew. Cook for an additional 10 minutes.

Notes

  • Adjust seasoning to your taste.
  • For a spicier stew, add more green chiles.
