Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 onion (diced)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Fresh parsley (for garnish)

Instructions

  1. Mix ground beef, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper in a bowl.
  2. Form meat mixture into small meatballs.
  3. Heat olive oil in a large pot over medium heat.
  4. Brown meatballs on all sides, then remove from pot.
  5. Add onion, carrots, and celery to the pot. Cook until softened.
  6. Pour in beef broth and diced tomatoes.
  7. Stir in thyme, paprika, salt, and pepper.
  8. Return meatballs to the pot. Simmer for 20-25 minutes.
  9. Garnish with fresh parsley before serving.

  • For a lighter option, use ground turkey.
