- 1 pound ground beef (or turkey)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 onion (diced)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Fresh parsley (for garnish)
Instructions
- Mix ground beef, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper in a bowl.
- Form meat mixture into small meatballs.
- Heat olive oil in a large pot over medium heat.
- Brown meatballs on all sides, then remove from pot.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Pour in beef broth and diced tomatoes.
- Stir in thyme, paprika, salt, and pepper.
- Return meatballs to the pot. Simmer for 20-25 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a lighter option, use ground turkey.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
