Description

A creamy and protein-rich pasta sauce made with cottage cheese and turkey sausage.


Ingredients

  • 10 oz (300 g) chickpea pasta, or your favorite high-protein pasta
  • 2 cups (400 g) cottage cheese
  • 1 cup (250 g) tomato sauce, passata
  • 6-8 fresh basil leaves
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 2 garlic cloves, finely chopped
  • ¾ lb (350 g) turkey sausage, cut into bite-size pieces
  • ⅓ cup (30 g) Parmesan, grated
  • 2 tablespoons fresh parsley, finely chopped
  • Salt and freshly ground pepper to taste

Instructions

  1. Cook the chickpea pasta according to package instructions.
  2. In a large pan, heat olive oil over medium heat.
  3. Add diced onion and garlic, sauté until soft.
  4. Add turkey sausage and cook until browned.
  5. Stir in tomato sauce and bring to a simmer.
  6. Add cottage cheese and mix well until heated through.
  7. Season with salt, pepper, and stir in basil and parsley.
  8. Toss the sauce with the cooked pasta and serve with grated Parmesan.
