Description

This Holiday Cranberry Chicken Bake combines tender chicken breasts with a sweet and tangy cranberry glaze, perfect for festive gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup fresh or frozen cranberries
  • ½ cup orange juice (freshly squeezed preferred)
  • ¼ cup honey or maple syrup
  • ½ teaspoon salt
  • 1 teaspoon fresh rosemary, chopped (or ½ tsp dried)
  • 1 teaspoon grated orange zest
  • 1 small garlic clove, minced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  4. Add cranberries, orange juice, honey, salt, rosemary, orange zest, and minced garlic to the skillet. Cook until cranberries soften.
  5. Place seasoned chicken in a baking dish and pour the cranberry glaze over the top.
  6. Bake in the preheated oven for 25-30 minutes until chicken is cooked through.
  7. Garnish with fresh rosemary, orange slices, and extra cranberries before serving.
