- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup fresh or frozen cranberries
- ½ cup orange juice (freshly squeezed preferred)
- ¼ cup honey or maple syrup
- ½ teaspoon salt
- 1 teaspoon fresh rosemary, chopped (or ½ tsp dried)
- 1 teaspoon grated orange zest
- 1 small garlic clove, minced
Instructions
- Preheat your oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add cranberries, orange juice, honey, salt, rosemary, orange zest, and minced garlic to the skillet. Cook until cranberries soften.
- Place seasoned chicken in a baking dish and pour the cranberry glaze over the top.
- Bake in the preheated oven for 25-30 minutes until chicken is cooked through.
- Garnish with fresh rosemary, orange slices, and extra cranberries before serving.
Notes
- For a spicier kick, add red pepper flakes to the glaze.
