Description

Homemade Jam Donut Focaccia is a delightful twist on traditional focaccia bread, filled with sweet raspberry preserves and topped with a sweet glaze.


Ingredients

  • 1 3/4 cups warm water (105-115°F)
  • 2 tsp sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil, divided
  • 1 jar raspberry preserves (Bonne Maman or similar)
  • 2 cups confectioners' sugar
  • 2-4 tbsp whole milk (or as needed for consistency)

Instructions

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. Add bread flour, all-purpose flour, salt, and 4 tbsp olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise for 1 hour until doubled in size.
  5. Preheat the oven to 375°F (190°C).
  6. Punch down the dough and spread it onto a greased baking sheet.
  7. Make indentations in the dough and fill with raspberry preserves.
  8. Let it rise for another 30 minutes.
  9. Bake for 25-30 minutes until golden brown.
  10. Mix confectioners' sugar with milk to make a glaze. Drizzle over the focaccia once cooled.
