Description

Homemade Mini Chicken Pot Pies are a comforting and easy dish made with flaky biscuits and a creamy chicken filling.


Ingredients

Scale
  • 2 cans flaky layers biscuits
  • 2 cans cream of chicken soup
  • 2 cans cooked chicken (or 2 cups fresh, cooked chicken, shredded)
  • 1 bag frozen mixed vegetables (thawed)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin.
  3. Flatten each biscuit and press it into the bottom and up the sides of each muffin cup.
  4. In a mixing bowl, combine cream of chicken soup, cooked chicken, mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper.
  5. Spoon the chicken mixture into each biscuit cup.
  6. Bake for 18-20 minutes or until the biscuits are golden brown.
  7. Let cool slightly before serving.

Notes

  • You can use leftover chicken for this recipe.
