Homemade Spicy Southwest Salad

Description

A zesty and refreshing salad with a kick.


Ingredients

Scale
  • 1 lime, juiced and zested
  • 1 tsp garlic powder
  • ½ tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • 2 tbsp honey
  • 1 tbsp avocado oil
  • 2 chicken breasts
  • ½ cup ranch dressing
  • 23 tbsp hot sauce of choice
  • 1 head green leaf lettuce, chopped
  • 2 tomatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, sliced
  • 2 avocado, sliced
  • 1 cup corn
  • ½ red onion, sliced
  • ½ cup tortilla strips
  • Cilantro for garnish
  • Lime wedges

Instructions

  1. Mix lime juice, garlic powder, cumin, chili powder, salt, honey, and avocado oil in a bowl.
  2. Marinate chicken breasts in the mixture for at least 30 minutes.
  3. Grill or cook chicken until fully cooked, then slice.
  4. In a small bowl, mix ranch dressing with hot sauce.
  5. In a large bowl, combine lettuce, tomatoes, black beans, bell pepper, avocado, corn, and red onion.
  6. Add sliced chicken on top of the salad.
  7. Drizzle with spicy ranch dressing.
  8. Top with tortilla strips, cilantro, and lime wedges.

Notes

  • Adjust hot sauce to taste.
  • Can substitute chicken with grilled tofu for a vegetarian option.
