- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (frozen or fresh)
Instructions
- Cut the chicken into bite-sized pieces and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- In a large skillet, cook the chicken over medium heat until browned and cooked through.
- Add the mixed vegetables to the skillet and cook for 2-3 minutes.
- Stir in the BBQ sauce and honey, coating the chicken and vegetables evenly.
- Add the rice and chicken broth, bring to a boil, then reduce heat to low.
- Cover and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
- Fluff with a fork and serve hot.
Notes
- You can use any type of BBQ sauce for this recipe.
- For extra flavor, marinate the chicken in the BBQ sauce and honey for 30 minutes before cooking.
- Feel free to add other vegetables like bell peppers or onions.
