Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (frozen or fresh)

Instructions

  1. Cut the chicken into bite-sized pieces and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet, cook the chicken over medium heat until browned and cooked through.
  3. Add the mixed vegetables to the skillet and cook for 2-3 minutes.
  4. Stir in the BBQ sauce and honey, coating the chicken and vegetables evenly.
  5. Add the rice and chicken broth, bring to a boil, then reduce heat to low.
  6. Cover and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
  7. Fluff with a fork and serve hot.

Notes

  • You can use any type of BBQ sauce for this recipe.
  • For extra flavor, marinate the chicken in the BBQ sauce and honey for 30 minutes before cooking.
