- 1 tablespoon balsamic vinegar
- 1 cup ricotta cheese
- 1/4 cup chopped pecans (optional for crunch)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, place the chicken breasts and drizzle with olive oil.
- Season with salt, black pepper, garlic powder, and dried thyme.
- Spread cranberries over the chicken.
- In a small bowl, mix honey and balsamic vinegar, then pour over the chicken and cranberries.
- Top with ricotta cheese and pecans if using.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
