  • 1 cup ricotta cheese
  • 1/4 cup chopped pecans (optional for crunch)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, place the chicken breasts and drizzle with olive oil.
  3. Season with salt, black pepper, garlic powder, and dried thyme.
  4. Spread cranberries over the chicken.
  5. In a small bowl, mix honey and balsamic vinegar, then pour over the chicken and cranberries.
  6. Top with ricotta cheese and pecans if using.
  7. Bake for 25-30 minutes or until the chicken is cooked through.
  8. Garnish with fresh parsley before serving.
