Description

A flavorful Italian Grinder Pasta Salad with a variety of meats and fresh vegetables.


Ingredients

  • 16 oz rotini pasta, cooked and cooled
  • 1/2 cup sliced pepperoni
  • 1/2 cup chopped salami
  • 1/2 cup chopped ham
  • 1 cup shredded iceberg lettuce
  • 1/2 cup sliced red onions
  • 1/2 cup sliced banana peppers
  • 1/2 cup sliced black olives
  • 1/2 cup chopped tomatoes
  • 1/2 cup shredded provolone cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large mixing bowl, combine the cooled pasta, pepperoni, salami, ham, lettuce, red onions, banana peppers, black olives, tomatoes, provolone cheese, and parmesan cheese.
  3. In a separate bowl, whisk together the mayonnaise, red wine vinegar, olive oil, Italian seasoning, salt, and black pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
