Cake:
- 1 box (15.25 oz yellow or white cake mix)
- 1 box (3.4 oz instant vanilla pudding mix)
- 1 cup crushed pineapple (with juice)
- 1/2 cup vegetable oil or melted butter
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg (optional)
- 1/2 cup chopped pecans or walnuts (optional)
Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 1/2 cup unsalted butter (softened)
- 3 –4 cups powdered sugar
- 1 tsp vanilla extract
- 1 –2 tbsp pineapple juice (optional)
Garnish (optional):
- Pineapple slices or wedges
- Toasted coconut flakes
- Chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9x13-inch pan.
- Mix cake mix and pudding mix. Add pineapple (with juice), oil/butter, eggs, vanilla, cinnamon, nutmeg. Mix until smooth.
- Fold in nuts, if using.
- Pour batter into pan, smooth top, and bake 30–35 minutes until golden and a toothpick comes out clean. Cool completely.
- Beat cream cheese and butter until creamy. Gradually add powdered sugar, then vanilla and optional pineapple juice.
- Spread frosting over cooled cake. Chill slightly before slicing.
- Garnish with pineapple, coconut, or nuts if desired.
