Juicy rolled chicken filled with feta and spinach.
Ingredients

- 4 pieces Boneless, Skinless Chicken Breasts
- 2 cloves Garlic, Crushed
- 1 cup Feta Cheese, Crumbled
- 2 cups Baby Spinach, Fresh
- 2 tablespoons Olive Oil
- ½ cup Sun-Dried Tomatoes, Chopped (optional)
- ½ cup Olives, Sliced (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix feta cheese, spinach, garlic, and optional ingredients.
- Flatten chicken breasts with a meat mallet.
- Place a portion of the filling on each chicken breast.
- Roll up the chicken and secure with toothpicks.
- Heat olive oil in a skillet over medium heat.
- Brown the chicken rolls on all sides.
- Transfer to a baking dish and bake for 25-30 minutes.
- Remove toothpicks and slice before serving.

- Serve with a side of vegetables.
