Juicy Rolled Chicken with Feta & Spinach

Description

Juicy rolled chicken filled with feta and spinach.


Ingredients

Scale
  • 4 pieces Boneless, Skinless Chicken Breasts
  • 2 cloves Garlic, Crushed
  • 1 cup Feta Cheese, Crumbled
  • 2 cups Baby Spinach, Fresh
  • 2 tablespoons Olive Oil
  • ½ cup Sun-Dried Tomatoes, Chopped (optional)
  • ½ cup Olives, Sliced (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix feta cheese, spinach, garlic, and optional ingredients.
  3. Flatten chicken breasts with a meat mallet.
  4. Place a portion of the filling on each chicken breast.
  5. Roll up the chicken and secure with toothpicks.
  6. Heat olive oil in a skillet over medium heat.
  7. Brown the chicken rolls on all sides.
  8. Transfer to a baking dish and bake for 25-30 minutes.
  9. Remove toothpicks and slice before serving.
