- ½ cup (115 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 2 large eggs, room temperature
- ½ cup (120 ml) milk
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 8 oz (225 g) cream cheese, softened
- ¼ cup (50 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light.
- Add eggs, milk, lemon juice, lemon zest, and vanilla to the butter mixture. Mix well.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- For the cream cheese swirl, beat cream cheese, sugar, egg, and vanilla until smooth.
- Pour half of the lemon batter into the prepared pan. Add cream cheese mixture on top. Pour remaining lemon batter over the cream cheese.
- Swirl with a knife to create a marbled effect.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
