Ingredients

  • 1½ cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120 ml) milk
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 8 oz (225 g) cream cheese, softened
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light.
  4. Add eggs, milk, lemon juice, lemon zest, and vanilla to the butter mixture. Mix well.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
  6. For the cream cheese swirl, beat cream cheese, sugar, egg, and vanilla until smooth.
  7. Pour half of the lemon batter into the prepared pan. Add cream cheese mixture on top. Pour remaining lemon batter over the cream cheese.
  8. Swirl with a knife to create a marbled effect.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Let cool before slicing.
