    • 1½ cups powdered sugar, sifted
    • 3 tablespoons fresh lemon juice
    • 2 tablespoons unsalted butter, melted
    • 2 tablespoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the sugar and butter until light and fluffy. Add the eggs and egg yolk one at a time, mixing well after each addition.
  4. Stir in the vanilla extract, lemon zest, milk, lemon juice, and sour cream until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
  8. For the glaze, whisk together powdered sugar, lemon juice, melted butter, and milk until smooth. Drizzle over cooled cakes.
