Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt and pepper.
- Dredge each chicken breast in flour, shaking off excess.
- Dip chicken in beaten eggs, then coat with panko breadcrumbs mixed with Pecorino cheese and lemon zest.
- Heat olive oil and butter in a skillet over medium heat.
- Fry chicken until golden brown, about 3-4 minutes per side.
- Transfer chicken to a baking dish and bake for 15-20 minutes, until cooked through.
- For the sauce, melt butter in the skillet and sauté garlic until fragrant.
- Add heavy cream, chicken broth, lemon juice, lemon zest, and Pecorino cheese. Simmer until thickened.
- Serve chicken topped with the lemon sauce and garnish with parsley.
