- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 ripe avocados, sliced
- Juice of ½ lemon
- 4 slices cheese (cheddar, provolone, or mozzarella)
- 1 large tomato, sliced
- Romaine or butter lettuce
- 8 slices hearty bread (sourdough, ciabatta, or whole grain)
- ½ cup mayonnaise
- 1 clove garlic, finely minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat your grill or pan over medium heat.
- In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper.
- Coat the chicken breasts with the spice mixture.
- Grill or cook the chicken for about 6-7 minutes on each side until fully cooked.
- While the chicken is cooking, prepare the creamy sandwich sauce by mixing mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl.
- Once the chicken is cooked, let it rest for a few minutes before slicing it.
- Spread the creamy sauce on each slice of bread.
- Layer lettuce, tomato, chicken, cheese, and avocado on four slices of bread.
- Top with the remaining slices of bread to form sandwiches.
- Serve immediately and enjoy.
