Description

A delicious loaded chicken and avocado sandwich that combines tender chicken, creamy avocado, and a flavorful sauce.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 ripe avocados, sliced
  • Juice of ½ lemon
  • 4 slices cheese (cheddar, provolone, or mozzarella)
  • 1 large tomato, sliced
  • Romaine or butter lettuce
  • 8 slices hearty bread (sourdough, ciabatta, or whole grain)
  • ½ cup mayonnaise
  • 1 clove garlic, finely minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or pan over medium heat.
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper.
  3. Coat the chicken breasts with the spice mixture.
  4. Grill or cook the chicken for about 6-7 minutes on each side until fully cooked.
  5. While the chicken is cooking, prepare the creamy sandwich sauce by mixing mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing it.
  7. Spread the creamy sauce on each slice of bread.
  8. Layer lettuce, tomato, chicken, cheese, and avocado on four slices of bread.
  9. Top with the remaining slices of bread to form sandwiches.
  10. Serve immediately and enjoy.
