Description

A hearty and flavorful cornbread casserole packed with cheese, bacon, and green chilies.


Ingredients

  • 1 package (8.5 oz) cornbread mix
  • 1 cup sour cream
  • 1 can (15 oz) cream-style corn
  • 1 can (4 oz) green chilies, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped cooked bacon
  • 1/2 cup diced green onions
  • 2 eggs
  • 1/4 cup melted butter
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a large bowl, combine cornbread mix, sour cream, cream-style corn, green chilies, eggs, and melted butter. Mix well.
  3. Fold in shredded cheese, bacon, and green onions.
  4. Season with salt and pepper.
  5. Pour mixture into prepared baking dish.
  6. Bake for 30-35 minutes or until golden brown and set.
  7. Let cool slightly before serving.
