Description

This Magical Lasagna Soup combines the flavors of traditional lasagna in a comforting soup form.


Ingredients

  • 1 lb lean ground beef
  • 1 lb Italian sausage (sweet or spicy)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes (canned)
  • 4 cups chicken broth
  • 2 cups small pasta (e.g., ditalini or orecchiette)
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef and Italian sausage over medium heat.
  2. Add diced onion and minced garlic; cook until onion is translucent.
  3. Stir in crushed tomatoes and chicken broth; bring to a boil.
  4. Add the small pasta and cook until al dente.
  5. Stir in ricotta cheese and half of the mozzarella until melted.
  6. Season with oregano, salt, and pepper.
  7. Serve hot, garnished with fresh basil and remaining mozzarella.
