Description
A refreshing and tangy salad made with marinated cucumbers, onions, and tomatoes.
Ingredients
Scale
- 2 cucumbers, thinly sliced
- 1 pint cherry or grape tomatoes, halved
- 1 small red or white onion, thinly sliced
- 1/4 cup apple cider vinegar or red wine vinegar
- 2 tbsp extra virgin olive oil
- 1 clove garlic, minced
- 1 tbsp chopped fresh parsley or dill
- Salt and pepper to taste
- 1/2 tsp red pepper flakes (optional)
Instructions
- Slice cucumbers and onions thinly.
- Halve the tomatoes.
- Combine cucumbers, tomatoes, and onions in a large bowl.
- Add vinegar, olive oil, minced garlic, parsley or dill, salt, pepper, and red pepper flakes (if using).
- Toss well to coat all ingredients evenly.
- Refrigerate for at least 30 minutes before serving.
Notes
- For best flavor, marinate for at least 30 minutes.
- Store leftovers in an airtight container in the fridge for up to 2 days.
