Description

A delicious Mediterranean Chicken Bake that combines tender chicken, fresh vegetables, and a flavorful coating topped with cheese.


Ingredients

  • 2 pieces boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 medium zucchinis sliced into half-moons
  • 1 cup cherry tomatoes halved
  • ½ piece red onion thinly sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil extra virgin is preferred
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • ½ cup mozzarella cheese shredded
  • ¼ cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken, zucchinis, cherry tomatoes, red onion, and garlic.
  3. In a separate bowl, mix olive oil, oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes.
  4. Pour the mixture over the chicken and vegetables, and toss to coat.
  5. Transfer the mixture to a baking dish.
  6. Top with mozzarella cheese, Parmesan cheese, and fresh parsley.
  7. Bake for 25-30 minutes until the chicken is cooked through and the cheese is bubbly.
  8. Let it cool for a few minutes before serving.
