Mediterranean Chicken Wraps are a nutritious and flavorful meal option packed with fresh ingredients.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 cloves, minced
  • Salt and pepper, to taste
  • 4 large whole wheat tortillas or wraps
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup hummus
  • 2 cups mixed greens (such as spinach or arugula)
  • Juice of 1 lemon
  • Optional: tzatziki sauce for serving

Instructions

  1. Preheat grill or skillet over medium heat.
  2. In a bowl, mix olive oil, oregano, cumin, minced garlic, salt, and pepper.
  3. Coat chicken breasts with the mixture.
  4. Grill or cook chicken for 6-7 minutes per side until cooked through.
  5. Let chicken rest for a few minutes, then slice.
  6. On each tortilla, spread hummus and layer mixed greens, chicken, tomatoes, cucumber, red onion, feta, and olives.
  7. Squeeze lemon juice over the filling and wrap tightly.
  8. Serve with tzatziki sauce if desired.
