Mexican Beef Empanadas

Description

Delicious Mexican Beef Empanadas filled with seasoned ground beef.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon oil
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • ¼ teaspoon oregano
  • Salt and black pepper, to taste
  • 2 tablespoons tomato sauce or salsa
  • ¼ cup beef broth
  • 1 package empanada discs or refrigerated pie dough
  • 1 egg, beaten, for egg wash

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add ground beef, cook until browned.
  4. Stir in cumin, chili powder, paprika, oregano, salt, and pepper.
  5. Add tomato sauce and beef broth, mix well.
  6. Simmer for 5 minutes, then remove from heat.
  7. Preheat oven to 375°F (190°C).
  8. Place a spoonful of beef mixture on each empanada disc.
  9. Fold discs over and seal edges with a fork.
  10. Brush tops with beaten egg.
  11. Bake for 20-25 minutes or until golden brown.

Notes

  • Let the filling cool before assembling.
  • Serve with salsa or sour cream.
