Description
Delicious Mexican Beef Empanadas filled with seasoned ground beef.
Ingredients

- 1 lb ground beef
- 1 tablespoon oil
- ½ small onion, finely diced
- 2 cloves garlic, minced
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon paprika
- ¼ teaspoon oregano
- Salt and black pepper, to taste
- 2 tablespoons tomato sauce or salsa
- ¼ cup beef broth
- 1 package empanada discs or refrigerated pie dough
- 1 egg, beaten, for egg wash
Instructions
- Heat oil in a pan over medium heat.
- Add onion and garlic, cook until softened.
- Add ground beef, cook until browned.
- Stir in cumin, chili powder, paprika, oregano, salt, and pepper.
- Add tomato sauce and beef broth, mix well.
- Simmer for 5 minutes, then remove from heat.
- Preheat oven to 375°F (190°C).
- Place a spoonful of beef mixture on each empanada disc.
- Fold discs over and seal edges with a fork.
- Brush tops with beaten egg.
- Bake for 20-25 minutes or until golden brown.
Notes
- Let the filling cool before assembling.
- Serve with salsa or sour cream.
